‘A little bit overwhelming’: New Lincoln bakery hits the sweet spot during busy opening

An award-winning Lincoln bakery has opened its first shop three years after it was founded as a delivery-only business.

Just Bake It has been run by Geshini Adatia from her own home since she started the business shortly after being made redundant in 2022.

But now she has branched out into a first store, based in Exchange Road.

Geshini said: “The first weekend was mayhem and a little bit overwhelming.”

She added that brownies, cake and pastries have been among the best sellers since then.

The opening came after the business won Best Baker or Sweet Treats of the Year prize at the Lincolnshire’s Life Magazine Taste of Excellence Awards in November.

Geshini – who often baked for her family while growing up – said: “It was very surreal, even now it just doesn’t feel like we’ve won an award for our bakes.”
